This corn salad recipe is surprisingly refreshing.  I've never really thought much of corn when it comes to weight loss but I was wrong. 

This recipe makes a great addition to any meal if you're watching your weight.

How this healthy salad helps with weight loss:

Corn contains lots of water and a good amount of protein, fiber, potassium, yet it is low in calories.  In fact, according to the USDA (National Nutrient Database for Standard Reference), it only contains 96 calories for every 100 grams.

So why isn't corn considered often as a weight loss helper?  Well, here comes that dirty little word that no one likes to hear, carbohydrates. 

Yes, corn does have lots of carbohydrates, in fact, it has about 21 grams of it in every 100 grams of corn.

But not only do our bodies need carbohydrates to feed our brain, but if you eat the right kind of carbohydrates it can help with weight loss.

Not all carbohydrates are beneficial, so it's important to choose the healthy ones and avoid the bad ones.  

Good carbohydrates come from fruits and vegetables and bad ones come from foods such as doughnuts, cakes and refined white bread.  See what a huge difference the source makes.  

Eating good carbohydrates can even help you lose weight since most of them contain lots of needed fiber along with good amounts of water content that contains vitamins and minerals.

Why are carbohydrates so important and why we should eat them.

Without getting too scientific, quite simply put, carbohydrates are the main energy source for our bodies and our brains and we need them to function properly.  

They not only provide energy but also provide nutrients and help protect our muscles because carbohydrates are the first source of energy are bodies use and when there are no carbs then the protein from our muscles will be used up.

So clearly carbohydrates are very important part of a healthy diet.

Harvest Summer Corn Salad Recipe:

Ingredients:

3 ears of corn with kernels sliced off
1 cup red bell pepper, chopped
1 cup green bell pepper, chopped
1/2 cup sweet Vidalia onion, chopped
1 clove garlic, minced
2 tbsp. Olive oil
2 limes, juiced
1 cup fresh cucumber, chopped
About 16 cherry tomatoes, cut in halves
1/2 cup fresh cilantro, chopped
1 teaspoon ground cumin
Salt & pepper to taste

Salad Dressing Preparation:

In a small bowl, add the oil, lime juice, garlic, cumin, salt and pepper and whisk until well blended.

Corn Salad Recipe Preparation:

Cut kernels off the ears of corn.  Then place the kernels in boiling water and boil for about 8 - 10 minutes.  This is important so the kernels do not taste milky.

Once done, drain and rinse the kernels of corn under cold water.

In a mixing bowl, add corn and all other ingredients along with the salad dressing and mix well.  Taste test and add more salt and pepper if needed.

Garnish:

Garnish with a slice of lime.

This corn salad recipe is so easy to make and if it is the end of summer, most of its ingredients are in season. 

That's why I like to call it Summer Harvest Corn Salad Recipe, because at the end of summer almost all the ingredients are in season and easily picked and so very fresh.

We were lucky to raid our small but plentiful garden to get the cucumbers, tomatoes and peppers we needed for this recipe. 

The rest we picked up at our local farmers market.  Local markets are just so great in the summer.
